Mischa's Cheddar Buttermilk Biscuits

Ingredients
- 2 1/2 cups of all purpose flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of sugar
- 1 1/2 teaspoons of kosher salt
- 1 teaspoon of freshly ground black pepper
- 5 Tablespoons of cold butter cut into small pieces
- 1/2lb of Tillamook Sharp Cheddar, coursely grated
- 1 1/4 cups of cold well-shaken 2% buttermilk

Whisk the Dry Ingredients Together
Whisk the flour, baking powder, baking soda, sugar, salt, and pepper together in a medium sized bowl.

Add the Butter, Cheddar, and Buttermilk
Add the cheddar and quickly mix through the flour mixture.
Add the buttermilk and use a fork to blend through until the mixture resembles a dough. Use your hands and knead the dough 4-5 times.
