Mischa's Cheddar Buttermilk Biscuits

These biscuits are light, fluffy, and an absolute perfect savory indulgence for a weekend dinner party.

Ingredients

  • 2 1/2 cups of all purpose flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of sugar
  • 1 1/2 teaspoons of kosher salt
  • 1 teaspoon of freshly ground black pepper
  • 5 Tablespoons of cold butter cut into small pieces
  • 1/2lb of Tillamook Sharp Cheddar, coursely grated
  • 1 1/4 cups of cold well-shaken 2% buttermilk

Whisk the Dry Ingredients Together

Preheat the oven to 400 degrees fahrenheit.

Whisk the flour, baking powder, baking soda, sugar, salt, and pepper together in a medium sized bowl.

Add the Butter, Cheddar, and Buttermilk

Add the butter and use a pastry blender or your fingertips to blend the butter into the flout mixture until it resembles a course meal. (Don't overdo this part. The key is to try and keep the butter as cold as possible. Overworking it will melt it.)

Add the cheddar and quickly mix through the flour mixture.

Add the buttermilk and use a fork to blend through until the mixture resembles a dough. Use your hands and knead the dough 4-5 times.

Spoon Into Biscuits

Use a 1/3 cup measure to spoon out the biscuits onto a baking sheet covered with parchment paper. You should have 12 biscuits.

Bake

Bake the biscuits for 15-20 minutes, until they're pale golden and the cheddar browns a little.
