Jerusalem Salad

A simple salad I like to serve with falafel.
Ingredients
- 1 large cucumber, seeded and diced
- 4 medium tomatoes, diced
- 1/2 a small red onion, diced
- 2 tablespoons chopped parsley
- 2 tablespoons tahini
- juice of half a lemon
- 1/4 cup of water
- salt
- pepper

Dice and Mix
Dice the cucumber, the tomatoes and the onion. Stir in the parsley.

Create the Tahini Sauce
Whisk together the tahini, lemon juice and water in a small bowl. Add salt and pepper to taste.

Finish and Serve
Stir the tahini sauce into the salad and check for seasoning. Serve immediately, or cover and store in the fridge until ready to eat.
