Hearty Beef Chili

I add three types of bell peppers to liven up and add freshness to this chili. My absolute favorite dish on a rainy day.

Ingredients

  • 2 Tbs olive oil
  • 2 large white onions, diced
  • 4 cloves of garlic, minced
  • 2 green bell peppers, diced
  • 1 yellow pepper, diced
  • 1 red pepper, diced
  • 1 lb of organic ground beef
  • 4 teaspoons of chile powder
  • 2 teaspoons of paprika
  • 2 teaspoons red pepper flakes
  • 2 teaspoons of cayenne pepper
  • 2 28-ounce cans of whole peeled tomatoes, blended in a blender or food processor with their juice
  • 4 Tbs chiffonade of fresh basil
  • 1 1/2 Tbs of kosher salt

Sweat the Onions and the Garlic

Heat the olive oil in a large heavy-bottom pot over medium-high heat and add the onions and garlic. Cook for about 10 minutes, or until translucent.

Brown the Meat with the Onions and Garlic

Add the meat to the pot, break apart and cook until browned.

Add the Bell Peppers, Spices, Tomatoes, and Basil

Add the bell peppers and spices to the pot, cook for one minute. Add the tomatoes, basil and salt to taste. Bring to a boil, reduce to a simmer.

Simmer

Simmer the chili for 30 minutes. Ladle in warm bowls and serve with your favorite toppings like aged sharp cheddar, sour cream, scallions, or bacon!
